- 4 cups fresh arugula
- 1 grapefruit segmented
- ⅛ cup slivered raw almonds
- ½ avocado pitted & flesh scooped out, mashed
- Juice of 1 lemon
- 3-4 tablespoons extra virgin olive oil or water if you prefer
- salt/pepper to taste
Place arugula, grapefruit segments and almonds in a large bowl and toss.
Whisk together the avocado, lemon juice, oil or water, and salt and pepper.
Drizzle a bit of the dressing over the salad just before serving.
~You will likely have leftover dressing. Store any leftover dressing in an air-tight jar or container separate from the salad for 1-2 days. Shake well before using.
