Ingredients
  • 1 cup packed fresh basil leaves
  • 1 cup packed arugula
  • 2 cloves garlic (peeled)
  • 1/2 cup raw pepitas
  • 1/4 cup raw almonds
  • 1/4 cup fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp salt (or to taste)
  • 1/8 tsp pepper (or to taste)
  • 2-3 tbsp water to thin
Instructions
  1. Place all ingredients, except olive oil and water, in a food processor.
  2. Process until combined, scraping down sides as necessary.
  3. Drizzle in the olive oil through the top while the machine is still running. This should make everything come together smoothly.
  4. Add water 1 tbsp at a time, processing after each addition and scraping down sides as necessary, until the desired consistency is reached.

Recipe Notes

~ Makes about 1 cup of pesto.
