Vegan Bruschetta with Avocado - a fuss-free easy appetizer for entertaining that will keep your guests coming back for more. Customize the toppings to your liking. Great as a light lunch or snack as well.

Ingredients
  • 1 baguette (sliced thin) (use a gluten free baguette if desired)
  • drizzle olive oil (optional)
  • 1 8 oz container WHOLLY® SIMPLY AVOCADO™ Garlic and Herb Dip and Spread (the Sea Salt variety would work as well)
  • 2-3 radishes (sliced thin)
  • 2-3 chives (snipped into roughly 1-inch pieces)
  • handful baby arugula
  • 8-10 cherry tomatoes (halved)
Instructions
  1. Preheat oven to 400 degrees F.

  2. Lay out the baguette slices on a baking sheet in one layer. Drizzle olive oil, if using, over the baguette slices. Bake for 6-8 minutes until toasty.

  3. Spread 1-2 tbsp of WHOLLY® SIMPLY AVOCADO™ Garlic and Herb Dip and Spread on each toasted baguette slice.

  4. Top half of the baguette slices with sliced radishes and chives. Top the other half with a few leaves of arugula and cherry tomatoes.

  5. Serve immediately.
