Raw Corn Radish Salad

A surprisingly flavorful simple raw corn and radish salad perfect for summer.

  • Kernels cut from 4 large ears of fresh sweet corn about 4 cups
  • 1 cup thinly sliced radishes
  • ¼ cup fresh cilantro chopped
  • Juice of 1-2 limes about 3-4 tablespoons
  • 1 ½ teaspoon smoked paprika
  • ½ teaspoon cumin
  • salt/pepper to taste


  • Combine all ingredients in a large bowl and toss to mix well. Taste and adjust seasonings as needed.
