Arugula & Grapefruit Salad

This light citrusy salad with a bit of crunch and creamy dressing is perfect for the winter months.

  • 4 cups fresh arugula
  • 1 grapefruit (segmented)
  • 1/8 cup slivered raw almonds
  • 1/2 avocado (pitted & flesh scooped out) (mashed)
  • Juice of 1 lemon
  • 3-4 tbsp extra virgin olive oil (or water if you prefer)
  • salt/pepper to taste


  • Place arugula, grapefruit segments and almonds in a large bowl and toss.
  • Whisk together the avocado, lemon juice, EVOO or water, and salt and pepper.
  • Drizzle a bit of the dressing over the salad just before serving.


~You will likely have leftover dressing. Store any leftover dressing in an air-tight jar or container separate from the salad for 1-2 days. Shake well before using.
