Watermelon Popsicles with Cucumber and Lime

These Watermelon Popsicles with Cucumber and Lime are the perfect refreshing treat for hot summer days. Sugar-free and kid approved! Just three ingredients and so easy to make.

Ingredients

  • 3 cups cubed watermelon
  • ½ cup peeled and sliced cucumber
  • juice of 1 lime
  • 2-3 tablespoon(s) pure maple syrup or agave (optional)

Instructions

  • Place all ingredients in a high-speed blender and purée until smooth.
  • Pour carefully into popsicle molds and insert sticks.
  • Freeze for 3 to 4 hours or overnight.
  • To un-mold, run molds under hot water for 20 to 30 seconds. Pull gently on the sticks to remove the popsicles from the molds.
