Equipment

Ingredients

  • 1 ½ cups full fat coconut milk I like Golden Star, which contains no additives, gums or thickeners
  • 3 cups frozen pineapple chunks
  • 1 frozen banana
  • ½ teaspoon vanilla optional

Instructions

  • Blend all ingredients in a high speed blender until smooth, preferably on the "Frozen" setting if your blender has one*.
  • Enjoy immediately!

Notes

*I use a Vitamix, which has several convenient settings in addition to the regular speeds. The frozen setting works miracles for smoothies and dairy free ice creams.
