Sweet, smoky, tangy and messy...these Sloppy Lentil Sandwiches will remind you of those from your childhood and will impress even the omnivores in your life.

Ingredients
  • 2 1/2 cups cooked lentils
  • 1 green pepper (diced)
  • 1/4 of a red onion (diced)
  • 2 small carrots (diced small or shredded)
  • 2 garlic cloves (minced)
  • 15 oz can tomato sauce
  • 1/4 cup ketchup
  • 1/4 cup organic brown sugar
  • 2 tbsp vegan worcestershire sauce (Annie's is vegan) (or use 1 tbsp balsamic vinegar and 1 tbsp molasses)
  • 1-2 tsp liquid smoke
  • 1 tsp yellow mustard
  • 1 tsp oregano
  • salt/pepper to taste
  • 6 buns
Toppings of choice, optional
  • tomatoes, pickles, avocado, sliced onion, etc.
Instructions
  1. Sauté the onion, garlic, green pepper, and carrots in 3 tbsp water over medium heat for 5-6 minutes until soft (adding more water as necessary so the veggies don't stick).

  2. Add the tomato sauce, ketchup, brown sugar, vegan worcestershire sauce (or balsamic and molasses), liquid smoke, mustard and oregano. Bring to a low boil, decrease heat to low and simmer for 20 minutes.
  3. Taste and add salt/pepper (or more worcestershire sauce or liquid smoke) if necessary.
  4. Add in the cooked lentils and stir until evenly coated. Simmer for another 10 minutes.
  5. Serve on buns with your favorite toppings.
