- 1 cup raw unsalted almonds
- 1 cup raw unsalted cashews
- ½ cup raw unsalted hazelnuts
- ½ cup raw unsalted pecan halves
- 2 tablespoons pure maple syrup
- 2 tablespoons finely chopped fresh rosemary
- 1 tablespoon coconut sugar or brown sugar
- 1 teaspoon salt or to taste
- ¾ teaspoon garlic powder
- ¼ teaspoon black pepper
- ¼ teaspoon cayenne or to taste
Preheat the oven to 325 degrees F. Line a rimmed baking sheet with a sheet of parchment paper. Set aside.
In a large bowl, combine the nuts. Pour the maple syrup over the nuts and mix well to coat evenly.
Combine the coconut sugar, rosemary, salt, garlic powder, pepper, and cayenne in small bowl and stir well to combine.
Pour the spice mixture over the nuts and mix well until evenly distributed.
Pour the nut mixture onto the prepared baking sheet into one even layer. Bake for 12 to 15 minutes, stirring every 5 minutes to prevent burning.
Add another sprinkle of salt, if desired.
Let cool on the baking sheet.
Once completely cool, transfer to an air-tight container.
~ Be sure to stir well every 5 minute while roasting to prevent burning. After stirring, spread the nuts back out into one even layer.
~The nuts will still be a bit soft when you take them out of the oven, but they will crisp up as they cool. If some of the nuts get stuck in clusters, you can simply break them apart.
