Ingredients

Garnishes, optional

  • fresh chopped cilantro
  • dash or two of hot sauce
  • sliced green onions
  • sliced jalapeños

Instructions

  • Heat the oil in a non-stick skillet over medium heat. Add the diced jalapeño and spices. Sauté until smooth and fragrant, about 3 minutes.
  • Add the beans and broth. Increase the heat to medium-high to bring to a boil, then reduce the heat to medium-low and simmer for 15 minutes until thickened, stirring occasionally. If the beans start to dry out, add additional broth or water.
  • Stir in the lime juice, to taste.
  • Serve hot with garnishes of your choice.

Notes

Bloom the spices in oil. Sautéing dried spices in fat before adding the liquid releases fat-soluble flavor compounds that you simply can't get any other way. Don't skip this step.
Drain and rinse the canned beans. This removes excess sodium and any canning liquid that would interfere with your carefully seasoned broth.
Add broth gradually. If the beans start to look dry before they're done simmering, add a splash more broth or water. You want them saucy and thick, not dried out.
Make a double or triple batch. These beans freeze beautifully in individual portions. Having them in the freezer means a flavorful side dish or taco filling is always just minutes away.
