    Just 3 ingredients needed for this delicious Coconut Berry Smoothie! High in potassium, vitamin C and electrolytes, this beautiful dairy free smoothie is hydrating and the perfect pick me up.

    We love smoothies in this house. I especially love them because they are quick and easy.  On school days when we are running tight on time, it’s easy to throw a bunch of healthy ingredients into the blender.

    It’s a great way to get a lot of nutrition and still get out the door on time. Today we made a Coconut Berry Smoothie. The kids downed these in mere minutes and, of course, I thought it was pretty tasty too!

    I used coconut water instead of non-dairy milk in this pink beauty. Coconut water is very hydrating and has an amazing amount of potassium.  It also boasts plenty of electrolytes and minerals, making it a better choice than store bought sports drinks.  Just be sure to buy coconut water with no added sugars or juices.

    With only 3 ingredients, this Coconut Berry Smoothie couldn’t be any easier. The hardest thing you have to do is peel the banana. I’m pretty sure we all have time to do at least that. Throw it all in the blender and purée. Easy!

    I don’t think I have to tell you how nutritious berries are, right? I used mixed berries in this smoothie – a combination of strawberries, raspberries, blackberries and blueberries. This combo not only makes a nutritious smoothie, but a darn pretty one as well. I love that bright purplish-pink color!

    Ingredients

    • 1 ½ cups frozen mixed berries or fresh if you prefer
    • 1 cup pure coconut water
    • 1 very ripe banana
    • a few ice cubes if you are using fresh fruit

    Instructions

    • Add all ingredients to a high speed blender.
    • Blend until smooth, about 30 seconds.

      Love a smoothie, especially in the summer. And, I always like to put a banana in smoothies, too. It makes them keep you feeling full longer. Great photos!5 stars

        It’s the only way I can tolerate coconut water. It’s so hydrating, refreshing, and full of electrolytes. But, I can’t stand the taste of it plain. In smoothies, though, you can’t taste it all. Just pure deliciousness! 🙂 Thanks, Traci!

        Oh yeah, I hear ya. Because of these new pics, I haven’t made anything new…oops! I went back and did the longer pins for quite a few of my older recipes. I need to finish that up too because I didn’t get to them all. But, I figure when I take better pics, then I will do the long pins for them at that time too. Hopefully with school back in session and us getting on a more regular schedule, I’ll figure out a schedule for myself that works best so I can get more than one thing done a day. 🙂
