    Easy Vegan Bruschetta with Avocado

    Vegan Bruschetta with Avocado – a fuss-free easy appetizer for entertaining that will keep your guests coming back for more. Customize the toppings to your liking. Great as a light lunch or snack as well.

    Chips and dip are delicious and a staple at most parties, but these little vegan bruschetta appetizers take it up a notch. And they’re just about as easy putting out the chip and dip bowl. I topped my avocado crostini with thinly sliced radishes & chives and baby arugula & cherry tomatoes. Cucumber slices, diced peppers, cilantro, or even fruits like pineapple or peaches would be great on top of the avocado as well. How would you top yours?

    Easy to Find

    I love that SIMPLY AVOCADO™ products are conveniently found at Walmart where I do a lot of my weekly shopping. No trip to a specialty store necessary. You’ll find them in the refrigerated cases in the produce aisle, where you can easily pick up the rest of your ingredients for these Easy Vegan Bruschetta as well.

    Quick and Easy

    These avocado bruschetta could not be easier to make. Start to finish, they take just 20 minutes, maybe less depending on how quickly you can slice a baguette. Spread the avocado dip on the crostini and make it even easier by setting out a toppings bar next to them and let everyone customize their own.

    Appetizer or Lunch?

    You definitely don’t need a party to enjoy these flavorful veggie topped crostini. I made a lunch out of them for myself – mostly because I just couldn’t stop eating them! They would also make a great side dish next to soup, salad, or pasta.

    Ingredients

    • 1 baguette (sliced thin) (use a gluten free baguette if desired)
    • drizzle olive oil (optional)
    • 1 8 oz container WHOLLY® SIMPLY AVOCADO™ Garlic and Herb Dip and Spread (the Sea Salt variety would work as well)
    • 2-3 radishes (sliced thin)
    • 2-3 chives (snipped into roughly 1-inch pieces)
    • handful baby arugula
    • 8-10 cherry tomatoes (halved)

    Instructions

    • Preheat oven to 400 degrees F.
    • Lay out the baguette slices on a baking sheet in one layer. Drizzle olive oil, if using, over the baguette slices. Bake for 6-8 minutes until toasty.
    • Spread 1-2 tbsp of WHOLLY® SIMPLY AVOCADO™ Garlic and Herb Dip and Spread on each toasted baguette slice.
    • Top half of the baguette slices with sliced radishes and chives. Top the other half with a few leaves of arugula and cherry tomatoes.
    • Serve immediately.

    ~Feel free to customize the toppings to your liking and make it your own.

      I admit it, I’m often too lazy to make guacamole. I usually just end up mashing the avocado on toast. This spread looks like a delicious solution for my lazy days.
