Arugula & Grapefruit Winter Salad – This light citrusy salad with a bit of crunch and creamy dressing is perfect for the winter months.
During these winter months, we eat enormous amounts of soup and pastas. They are deliciously comforting and warming. But even in the winter, sometimes I want something lighter. This Arugula and Grapefruit Winter Salad makes a quick lunch or an easy refreshing start to a heavier meal.
Flavors and textures are so important when it comes to simple salads. I like to have a few flavors that really stand out and, for me, I need to have a little crunch. The peppery arugula pairs nicely here with the light fresh citrusy grapefruit. I’ve added some slivered almonds for the crunch. A drizzle of creamy citrus dressing brings it all together.
Arugula is in the same family with cauliflower and kale and is very healthy. It’s extremely low in calories, but contains many vitamins, minerals and antioxidants. This peppery green leafy veggie is high in Vitamin C, A, K, folate, copper and iron. It has also been found to contain compounds that inhibit cancer cell growth.
Grapefruits, rich in Vitamin C and lycopene (in pink and red fruits), have also been known to reduce tumor size, lower cholesterol and prevent kidney stones.
If one of your resolutions was to eat better in the new year, this salad will fit in nicely with your plan.
Arugula & Grapefruit Winter Salad

- 4 cups fresh arugula
- 1 grapefruit (segmented)
- 1/8 cup slivered raw almonds
- 1/2 avocado (pitted & flesh scooped out) (mashed)
- Juice of 1 lemon
- 3-4 tbsp extra virgin olive oil (or water if you prefer)
- salt/pepper to taste
- Place arugula, grapefruit segments and almonds in a large bowl and toss.
- Whisk together the avocado, lemon juice, EVOO or water, and salt and pepper.
- Drizzle a bit of the dressing over the salad just before serving.
~You will likely have leftover dressing. Store any leftover dressing in an air-tight jar or container separate from the salad for 1-2 days. Shake well before using.
