    This Hearts of Palm Salad with a Simple Lemon Vinaigrette needs just a few ingredients and a few minutes to make. The flavor payoff, however, is huge!

    Hearts of Palm Salad

    Sometimes the simplest of flavors make the most delicious bites. Hearts of palm, tomatoes, cucumbers, and avocados in a simple lemon dressing. So easy and so delicious! It’s makes a great starter salad or side dish. And sometimes I eat it as a main dish for lunch with a side of crusty bread.

    Hearts of Palm Salad

    Ingredient notes

    Hearts of palm ~ Heart of palm is the edible inner core of certain types of palm trees. This vegetable is white and tubular and tastes like a mild artichoke. I know you guys love artichokes based on the popularity of my Buffalo Chickpea and Artichoke Taquitos and my Mediterranean Pasta w/ Roasted Red Peppers & Artichokes, so I’m confident you’ll love this hearts of palm salad, too!

    Hearts of palm contain fiber, B vitamins, vitamin C, calcium, iron, potassium, and protein. It is also low in fat and cholesterol free. [source]

    Tomatoes ~ I like using cherry or grape tomatoes and cutting them in half so they’re about the same size as the hearts of palm rings.

    Cucumbers ~ Cucumbers are cool, crisp and hydrating. Their mild flavor complements the briny hearts of palm and sweet tomatoes, well.

    Avocado ~ Avocado has a wonderfully creamy texture that helps to bring the whole salad together.

    How to make the recipe

    Chop the ingredients and toss them in a bowl together. Drizzle the simple lemon vinaigrette over the hearts of palm salad and mix to combine.

    Serve immediately or store in the fridge until ready to eat.

    Storage

    This Hearts of Palm Salad will keep in the fridge for 2 to 3 days. If possible, only add the avocado when ready to serve as it will start to brown once cut.

    Ingredients

    Hearts of Palm Salad

    • 1 14 oz jar hearts of palm sliced thin (it will make rings if you push out the middle)
    • 1 avocado pitted, peeled and cut into bite size pieces
    • 2 cups grape tomatos halved
    • ½ large seedless cucumber cut into bite size pieces

    Simple Lemon Vinaigrette

    • 2 tablespoons lemon juice
    • 1 tablespoon apple cider vinegar
    • 3 tablespoons extra virgin olive oil
    • salt and pepper to taste

    Instructions

    • Add all salad ingredients to a bowl and set aside.
    • Whisk together the vinaigrette ingredients and drizzle over the salad – you probably won’t need all of the dressing. Save the remaining in an air tight container in the fridge.
    • Enjoy!
