    When I gave up coffee last year, I replaced my morning cup pot of joe with a green smoothie or green juice. It’s a healthy habit that I’ve now been able to stick with several months.

    I love getting a big dose of greens in the morning. It helps me feel healthy and energized – a feeling that lasts throughout my day helping me make better choices all day long.

    • 1 banana
    • ½ cup frozen blackberries
    • ½ cup of lettuce
    • ½ cup light coconut milk
    • ¼-1/2 cup of water (as needed to get things moving)
    • 1 tablespoon chia seeds
    • 3 ice cubes

    Instructions

    • Purée until smooth.

Notes from Veggie Inspired: I used part romaine and part green leaf lettuce for this smoothie that I had already chopped for a salad the night before. I like to grind my chia seeds in a coffee grinder before adding them to the smoothie to ensure there are no full seeds left. You can eat the seeds whole, I just simply prefer them ground.

      My favorite ‘green’ smoothie is actually from Vitamix, it’s not too sweet and makes me feel great!
      Blend the following together:
      1/2 cup water
      1 cup green grapes
      1/2 cup pineapple chunks
      1/2 ripe banana peeled
      2 cups fresh spinach packed
      1/2 cup ice cubes
      Yum!

        Ooooh, grapes! I don’t think I’ve ever added grapes to a smoothie, but I love the sound of it! Considering I have a Vitamix, I probably have that same recipe sitting in my cabinet…ha! Thanks, Michelle!
