When I gave up coffee last year, I replaced my morning cup pot of joe with a green smoothie or green juice. It’s a healthy habit that I’ve now been able to stick with several months. I love getting a big dose of greens in the morning. It helps me feel healthy and energized – a feeling that lasts throughout my day helping me make better choices all day long.

Drink Your Greens

You know how healthy and nutrient dense leafy greens are and you also know that your kids (or you, for that matter) probably aren’t eating enough of them. Adding them to smoothies is the perfect way to hide them and still reap the nutritional benefits. Becky has mastered the perfect balance of sweet fruits and leafy greens so the whole family will enjoy drinking these. Each recipe makes enough for one – so you might want to double it up if your spouse is drinking, too, or if you’re serving littles.

My daughters just wandered over as I’m writing this and one pointed to the picture of the Coconut Blackout Smoothie saying “Yummmmm. I remember when we drank that!” I thought I’d ask for their thoughts on this particular smoothie to share with all of you. Here goes – C says, “Yummy. I LOVE this pink smoothie.” K says, “Mommy makes the best smoothies. Can we have that again one day?” There you have it – kid approved! (Side note – these little ladies turn 5 in 2 weeks. Becky says, "Lettuce has an even lighter flavor than spinach in a smoothie, so don’t be shy about adding a healthy handful. Most lettuce is pretty watery, so your lettuce smoothies will be a little thinner than the green smoothies you’re used to."

Ingredients
  • 1 banana
  • 1/2 cup frozen blackberries
  • 1/2 cup of lettuce
  • 1/2 cup light coconut milk
  • 1/4-1/2 cup of water (as needed to get things moving)
  • 1 tablespoon chia seeds
  • 3 ice cubes

  1. Puree until smooth.

Notes from Veggie Inspired: I used part romaine and part green leaf lettuce for this smoothie that I had already chopped for a salad the night before. I like to grind my chia seeds in a coffee grinder before adding them to the smoothie to ensure there are no full seeds left. You can eat the seeds whole, I just simply prefer them ground.

    My favorite ‘green’ smoothie is actually from Vitamix, it’s not too sweet and makes me feel great!
    Blend the following together:
    1/2 cup water
    1 cup green grapes
    1/2 cup pineapple chunks
    1/2 ripe banana peeled
    2 cups fresh spinach packed
    1/2 cup ice cubes
    Yum!

    Hi Jenn, love your site! And thanks for all the smoothie recipes. I have been a smoothie lover for years and your post inspired me to get back on the wagon. I find it hard to drink cold stuff in the winter but hey I can go stand next to the heater vent!My favorite smoothie is a combo of frozen banana, a green leafy, some berries, some non-dairy milk, and a tiny shot of stevia. I’m not very precise in my measurements which leads to lots of surprises.

    I don’t really have a “favorite” one….I throw some fruit and a little bit of spinach in there and add liquid until I get it thin enough….maybe I need some actual recipes! But I can’t eat bananas, and most recipes use them as a thickener. Any possible substitutions???

      Hi, Talia. Not all of them add bananas. Avocado, dairy free yogurt, nut butters, flax meal, and chia seeds are all great ways to thicken without banana. Or just use less liquid.

        Do you have a suggested portion to substitute for each banana? I also can’t eat bananas and i find flax meal thickens up with time so judging the amount in the blender is tough.

          I would start with a tablespoon and use less liquid. Pour the liquid in slowly while the blender is running and stop when you get the consistency you are looking for. Good luck!

    I totally go through phases where I am doing a morning green smoothie and then I stop for a week or so. I had one dally for like 2 years, so i’m not sure what changed.Maybe I need some new ideas like this ebook!
