    This Vegan Avocado Toast features hearty bread toasted until just crisp, creamy mashed avocado, thinly sliced radishes, hemp seeds, and freshly cracked black pepper.     Ingredients you need

    Ingredient notes and substitutions

    Bread ~ I suggest a hearty whole grain bread that toasts up nice and crunchy. This provides a lovely texture contrast to the creamy avocado.

    Use gluten-free bread, if desired.

    For store bought breads, I like Ezekiel sprouted grain breads – they have gluten free options, as well, if you need/want that. Or check your local bakery for freshly made whole grain options.

    Not all bread is vegan, so be sure to check the ingredient list if this is important to you.

    Avocado ~ You can’t have avocado toast without avocado! They have a super creamy texture and are mild in flavor, but rich in mouthfeel.

    Avocados are high in fiber, potassium, vitamin K, folate, vitamin B6, vitamin E, vitamin C, and healthy fats. The healthy fats help your body to absorb other nutrients when eaten together. They are anti-inflammatory and contain antioxidants, can help you control blood sugar levels, and may help to lower cholesterol. [source]

    How to pick a good avocado:
    There are a few tricks to choosing a perfectly ripe avocado. Look for dark green skin with a slightly bumpy texture. It should yield to gentle pressure, but not feel mushy. Remove the stem cap and look for green or yellow color underneath.

    Radishes ~ Raw radishes have a great crunchy texture and somewhat spicy bite. The flavor complements the mild, creamy avocado perfectly.

    Hemp Seeds ~ Hemp seeds are considered a superfood. They have an incredible nutritional profile, including being a complete protein. [source]

    These little seeds not only bring loads of nutrients, but an extra layer of texture, also.

    Extras ~ I like to finish this vegan avocado toast with some freshly ground black pepper. A pinch of flaky sea salt can punch up the flavor, as well.

    I also really like a drizzle of balsamic vinegar over the top on occasion.

    How to make the recipe

    Toast the bread to your desired doneness.

    Mash the avocado on a plate or cutting board and then spread it onto the toast.

    Lay the thinly sliced radishes over the top of the avocado mash.

    Sprinkle with hemp seeds, freshly cracked black pepper, and flaky sea salt, if desired.

    How to serve

    Serve the avocado toast open face. Eat immediately.

    Avocado toast toppings

    Avocado Toast can be customized any which way you like.

    Vegetables ~ Obviously, we like this vegan avocado toast with radishes, but basically any vegetable, shredded or sliced would be a great addition. Shredded carrots, thick sliced vine-ripened tomatoes, thinly sliced cucumber, sautéed mushrooms, or leafy greens like arugula or baby spinach would make tasty toppings.

    Fruit ~ Even fruit slices like pears, apple, banana, or strawberries are a good choice (try it- trust me!).

    Protein ~ You can add cooked beans, baked tofu, or any chopped nuts or seeds that you like. A sprinkle of nutritional yeast would be delicious!

    Extras ~ Garlic, balsamic vinegar, hot sauce, crushed red pepper flakes, sliced or diced jalapeños, squeeze of fresh lemon juice, Vegan Parmesan, Quick Pickled Red Onions, or fresh herbs make fabulous garnishes.

    Pro tips and tricks

    ~ Choose a hearty whole grain bread (gluten-free, if desired) and toast it!

    ~ Use a ripe avocado, but not over-ripe. The avocado should yield to gentle pressure, but not feel mushy. The skin will be a bit darker, not bright green, with a slightly bumpy texture. Remove the stem cap and the color underneath should be green or yellow. Cut out any black or brown spots from the flesh and discard before mashing.

    ~ Cut and mash the avocado only when you’re ready to eat. Do not do this ahead of time and the avocado mash will turn brown.

    ~ Mash the avocado on a cutting board or plate and then spread onto the toast. Do not mash the avocado directly onto the toast or you risk the bread losing some of its crunch and texture.

    ~ Slice the radishes very thinly.

    ~ Season it! Freshly cracked black pepper adds tons of flavor. Salt, optional, can also punch up the flavors. Optional, add a drizzle of balsamic vinegar or a squeeze of fresh lemon juice.

    FAQs

    What is avocado toast?

    Avocado toast is a kind of sandwich, served open faced, with mashed avocado on top. Often, there are other toppings on the avocado mash, as well.

    Is avocado toast healthy?

    It can be! Avocado by itself is a healthy food. So, whether avocado toast is healthy or not is really up to the toppings. This vegan avocado toast with radishes is certainly nutritious, offering plenty of plant-based protein, fiber, good fats, vitamins, minerals, and antioxidants.

    Is guacamole on toast the same as avocado toast?

    Guacamole is an avocado based dip or spread typically containing other ingredients, like salt, lime juice, onion, etc. Avocado toast uses plain mashed avocado and then additional toppings on top instead of mixed in. Similar, but different.

    Should avocado be refrigerated?

    Unripe avocados should be left at room temperature on the counter until they ripen. Once ripe, they should be eaten immediately or can be refrigerated for about 3 more days.

    • 1 avocado pit removed and peel removed
    • 2 radishes sliced thin
    • 1 tablespoon hemp hearts
    • 2 slices whole grain bread gluten free, if desired
    • fresh cracked pepper to taste
    • salt optional, to taste

    Instructions

    • Toast both slices of bread to your liking.
    • Mash the avocado flesh with the back of a fork.
    • Spread half the avocado on one slice of toast and repeat with the other slice.
    • Add the sliced radishes on top of the avocado.
    • Sprinkle on the hemp hearts.
    • Add freshly cracked black pepper and salt, if using.
