A cross between a quick bread and a cake and full of chocolate chips – you are going to LOVE this refined sugar free Banana Chocolate Chip Snack Cake!
There are two main reasons I don’t buy packaged cookies, cakes or pastries: 1) they aren’t good for us and 2) I will eat at least half of the package in one sitting.
Needless to say, I have a wicked sweet tooth and no self control. I have managed to pass this trait on to my children as well.
Instead of totally depriving ourselves of a little sweetness from time to time, I like to make us treats that are a bit healthier. Many cake and cookie recipes call for a full cup of sugar or more!
Not only does this Banana Chocolate Chip Snack Cake have less sugar, it is also dairy, egg and oil free.
Healthy Sweet Treat
The texture falls somewhere between a quick bread and a cake.
The bananas contribute to the sweetness, so you can get away with less added sugar. With 1/2 cup of sugar in this recipe, it is plenty sweet. I think you could probably even reduce it even more if don’t have a big sweet tooth.
The whole wheat flour makes it hearty and filling, so one small piece will leave you satisfied. And there are plenty of chocolate chips to go around!
My girls were circling the kitchen as I was making this and begging to try it as soon as it came out of the oven. They were having a very hard time practicing patience as I took the photos. Check out that cute little hand reaching for a piece!
They went on to have 3 (small) pieces each during the rest of the day. I also sent a piece in my son’s lunch the day after I made these. There was not a crumb in sight when I cleaned out his lunchbox after school.
I use organic coconut sugar in most of my baking. Supposedly, it’s lower on the glycemic index than other sugars, but truth be told, I think the jury’s still out on that one. It does retain some vitamins and minerals that other sugars don’t have, but again, the amounts are very limited.
So, while this snack cake may be healthier than your traditional cakes and cookies, I still have to tell you that it’s a treat, so don’t go eating the whole pan!

- Preheat oven to 350 degree F.
- Whisk flour, flaxmeal, sugar, baking soda in a small mixing bowl.
- In a medium bowl, whisk together the apple cider vinegar, vanilla, non dairy milk and smashed bananas.
- Whisk the dry ingredients into the wet until combined.
- Stir in the chocolate chips.
- Pour batter into an 8x8 baking dish lined with parchment paper. (Allow your parchment paper to overhang the edges by a few inches so it will be easy to lift the cake out later).
- Bake 30-35 minutes until a toothpick inserted in the center comes out clean.
~Alternately, instead of mixing your chocolate chips into the batter, you can sprinkle them over the top after you pour your batter in the pan. That is what I did in these photos.
