Of course this refreshing fruit salsa is wonderful during the hot summer months when juicy, fresh pineapple is in season. Serve it up at picnics or backyard BBQs as a side dish or snack that everyone will love.
But, don’t worry, you can make it all year long using the pantry staple, canned pineapple! Just be sure to drain it well before adding to the recipe.
It tastes delicious either way!

Pineapple ~ I used canned pineapple in 100% juice so I can make this all year round. It’s one of the fruits and veggies that actually tastes good from a can.
Drain the pineapple, but save the juice! Pineapple juice can be used in sauces or smoothies.
If you can get your hands on a fresh pineapple, by all means, use that.
Dice the pineapple into small bite size pieces. When I use canned pineapple, I usually buy the tidbits. Chunks are fine, too, but you’ll want to dice them smaller.

Avocado ~ Dice the avocado into similar bite-size pieces as the pineapple.
Onion ~ I prefer red onion in this dish. Dice it finely.
Seasonings ~ Fresh cilantro, lime juice, and a pinch of salt round out the flavors.
Want it spicier? We usually pair this avocado salsa with something more spicy, so I tend to keep it on the mild side. However, if you are eating it by itself with chips, feel free to throw in a jalapeño or two. Or a serrano if you like an even spicier kick of heat.
Want more vegetables? Diced red bell pepper, diced cucumber, or diced tomato would be lovely here, as well.
Want a smoky flavor? A dash of chili powder or smoked paprika would be tasty, too.

I do not recommend freezing this salsa recipe. The texture won’t hold up after defrosting.

- 1 can (20 oz) pineapple tidbits drained (or 2-3 cups of fresh diced pineapple)
- 1 avocado peel and pit discarded
- ¼ cup diced red onion
- ¼ cup cilantro chopped
