    Peaches and Cream Dairy Free Pancakes – super thick, soft and fluffy pancakes bursting with bites of fresh peach throughout. Enjoy them straight from the griddle or make a big batch and freeze them to simply pop in the toaster when ready to eat.

    We’re officially in back-to-school mode now. It’s only been a few days so far, but we are easily falling back into our routines of getting up earlier, packing lunchboxes and backpacks, and getting dressed right away instead of lounging around in pajamas for hours.

    Although our mornings are running smoothly so far, I know that the further we get into the school year, the more times I will be hitting the snooze button (please tell me I’m not the only one!).

    What’s a mom to do when you want to send your kids off with a filling breakfast to fuel their day, but don’t always have the energy to make it happen?

    Don’t resort to cold sugary cereal – think pancakes instead! Don’t think you have time for pancakes in the morning? Keep reading and I’ll prove to you that not only is there enough time, but your kid will be in charge of getting them on their plate all by themselves!

    The Most Important Meal of the Day

    You know what they say – breakfast is the most important meal of the day. It also happens to be my kids’ favorite meal (mine too!) and they can’t wait to get downstairs to fill their plates or bowls with something yummy.

    They tend to prefer sweet over savory for their first meal, so fruit is always a great choice.

    Silk® Peach & Mango Dairy-Free Yogurt Alternative

    Peaches are one of my kids favorite fruits and they have been especially good this year. We’ve been enjoying my Peaches and Cream Dairy Free Donuts, Peach Scones, and Warm Peach Crisp all summer. So, naturally, I opted for the Peach & Mango flavor here to use in my pancakes.

    It brings a perfectly smooth, creamy texture and bright, fruity taste. The pancakes are bursting with little bites of peach throughout. I topped the pancakes with even more Silk® Peach & Mango Dairy-Free Yogurt Alternative to bring home the flavors even more.

    I mentioned earlier how thick and fluffy these dairy free pancakes are, but just take a look at this picture to see for yourself! Perfection!

    Ready to Eat

    Of course, all of the Silk® Dairy-Free Yogurt Alternatives are ready to eat and delicious all on their own. My kids love them topped with granola and fresh fruit, which makes a great after school snack!

    Make Ahead – Freezer Friendly – Toaster Ready

    Ok, I promised to tell you how you can have these pancakes ready in the blink of an eye even on school mornings. Make a big batch on the weekends, or any day when you have a little extra time, and then freeze them between small squares of parchment paper in a freezer safe bag or container. When your kids are ready to eat (and you’re still trying to drag yourself out of bed), they can simply pop a frozen pancake in the toaster and in just minutes they’ll be ready for that pure maple syrup drizzle.

    Even shorter on time? Skip the maple syrup and toppings and take a pancake or two to go. They can eat them on the way to the bus or in the car on the way to drop-off.

    And lastly, if you’re one of those early risers, these Peaches and Cream Dairy Free Pancakes only take about 30 minutes from start to finish – less if you have a large griddle that can cook 5 or 6 pancakes at a time.

    Super thick, soft and fluffy dairy free pancakes bursting with little bites of fresh peaches. Enjoy them straight from the griddle or make a big batch and freeze them to simply pop in the toaster when ready to eat.

    Ingredients

    • 1 ½ cups white whole wheat flour (or all-purpose flour)
    • 1 tbsp baking powder
    • ½ tsp Himalayan Pink salt (or sea salt)
    • 5.3 oz Silk® Peach & Mango Dairy-Free Yogurt Alternative
    • 1 ½ cups cashew milk (for nut free - use soy milk)
    • 1 tsp pure vanilla extract, (optional)
    • 2 tbsp pure maple syrup (use 3-4 tbsp if you like a sweeter pancake)
    • ½ cup diced fresh peaches (diced small)

    Toppings:

    • dollop of Silk® Peach & Mango Dairy-Free Yogurt Alternative
    • diced fresh peaches
    • drizzle of pure maple syrup

    Instructions

    • Heat a large skillet or griddle over medium-low heat.
    • In a medium mixing bowl, whisk together the flour, baking powder, and salt. 
    • In a small mixing bowl, whisk together the Silk® Peach & Mango Dairy-Free Yogurt Alternative, cashew milk, vanilla, and maple syrup. 
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix! A few lumps are fine.
    • Gently stir in the ½ cup of fresh diced peaches. 
    • Once your griddle is hot, gently spritz with a little oil (if using a good non-stick griddle, skip the oil) and pour ¼ cup of batter per pancake. Cook until tiny bubbles start to form and burst on the tops - about 4-5 minutes.* The pancake should easily be flipped when the first side is done. Flip and cook another 3-4 minutes. Transfer to a plate to cool. Repeat until the remaining batter has been used. Adjust heat as necessary so the outsides don't burn before the middles are done. I usually find I have to turn down the heat a bit as I go. 
    • To serve, top with a dollop of Silk® Peach & Mango Dairy-Free Yogurt Alternative, fresh diced peaches, and a drizzle of pure maple syrup if desired. Or simply eat them plain - they're great that way too!

    Notes

    *Low and slow is the best way to cook these pancakes. They are super thick and fluffy, so if your heat is too high, the outsides will burn before the middle is done. I suggest testing one pancake first before pouring several on your griddle at once to make sure the heat is right. Every stove top is different. Adjust heat as necessary as you go.

      I’m so jealous. I still can’t get these yogurts. I’m dying to try them. You pancakes look delicious and it’s easy enough to sub the yogurt for another variety in the meantime. I can’t wait to try them before peach season ends!

      Why haven’t I ever thought to add peaches to our pancakes??? We love adding blueberries or strawberries – I need to try this especially since I’ve been super obsessed with peaches this summer! They’ve been so amazing this season! That peach mango yogurt sounds so perfect for this fluffy stack.

        The peaches here have been extra good this year too. Sometimes they are hit or miss, but we haven’t gotten a bad one yet this summer. I’ll be sad when the season ends.

        I clearly jinxed myself when I put it in writing that the girls were doing so well. This morning I put one of my daughters on the bus crying and whining, “I don’t want to go to school.” Poor baby…my heart just about broke into pieces…but I know the best thing for her is to face her fears and learn to cope. I e-mailed the teacher and gave her a heads up and asked for an update later in the day. I haven’t heard anything so I’m taking that as a good sign!
